Nothing Better Than Free Tomatoes

Canned TomatoesA few weeks ago, I was thrilled to win my first ever giveaway! This wasn’t just any giveaway. This was a tomato giveaway, proudly sponsored by The Hippy Health Nut. My wonderful gift arrived in a cute crate full of tomatoes and recipes, but I had a special idea in mind for a couple of the cans.

I found a chili recipe that called for two cans of fire roasted tomatoes. Being who I am, of course I made the chili “Quest Style” which means that I put my own twist on things to make it quick, easy and healthy for us competitors. I rarely ever stick to a recipe. That’s just a boring way of doing things.

Crock Pot Chili

  • 1 lb lean ground turkey
  • 1 onion, chopped
  • 4 cloves minced garlic
  • 2 14 oz cans of fire roasted tomatoes (not drained)
  • 4 cups cubed sweet potatoes
  • 1 Tbsp cumin
  • 1 Tbsp chili powder
  • 1/8 tsp cayenne pepper
  • 2 cups water

Brown the turkey on the stove top until cooked thoroughly. Meanwhile toss all the other ingredients into the crock pot. Stir in the ground turkey and mix everything together. Cook on low for 8 hours. Makes 6 huge servings.

ChiliI used lean ground turkey (93/7) and sweet potatoes instead of beans to keep it paleo friendly. I didn’t even peel my sweet potatoes. I just washed them and cut into rounds, then I cut each round into quarters. This recipe is probably one of the easiest ever. The hardest part was browning the turkey.

You can jazz it up how you like by using ground beef instead of turkey or throwing in a can of beans. I’m taking some for lunch today because I’ve got a ton leftover. And yes, I realize true Texans are horrified at this version of chili and would not even consider it chili at all. Feel free to suggest a new name for it if you’re feeling creative.

      It was so yummy too! I had two bowls. I was worried they wouldn’t hold up and turn to mush but they stayed strong. Loved the fire roasted tomatoes too.
