Due to the resounding success that I had with zeggs this week, I decided to give its related cousin – zoats – a try. Zoats are very close to zeggs but with the addition of oats. Duh, I know right. Seems genius when you think about it. One of those “why didn’t I think of that” moments.
After trying both, I’m not sure which one I like better. At least I’ve got options – with oats, without oats. You can easily do this on the stovetop but as you know I’m all about speed, convenience, and not making extra dishes. The microwave is always my weapon of choice if possible.
Yesterday’s zoat combo was pretty much mind blowing. Or maybe I’ve just got a small mind. I used the basic recipe below and added in 1 Tbsp unsweetened cocoa, a splash of vanilla extract, topped with 1/2 a brownie protein bar, and poured a little almond milk on top.
I used old fashioned oats that aren’t the quick cooking variety. I assume that this would work with quick cooking oats, but I can’t say for sure. If you try with them, leave a comment below so everyone knows if there’s a green light.
Zoats
- 4 egg whites from a carton
- 1/2 small zucchini, shredded (100g)
- 1/2 cup liquid (water, coffee, etc)
- 1/4 cup old fashioned oats
- Spices, sweeteners, flavorings
Make sure to use a plastic container that has plenty of room for expansion. Oats are famous for overflowing in the microwave so you need extra headroom here to avoid disaster.
Pour the egg whites into the container with the zucchini and oats. Add the liquid you’re using and any spices and sweeteners. Swirl slightly to combine.
Don’t panic that it looks like oat zucchini soup. Microwave for 30 seconds and stir. Repeat this process for 30 seconds at a time until cooked and resembling oatmeal texture. Top with desired toppings and enjoy!
I’m thinking I need to buy stock in egg whites and zucchini as sales are going up from my support alone. 😉 What combination are you going to try? Zeggs or zoats – what’s your vote for the winner?
