Blueberry Banana Stuffed French Toast

I seemed to have developed an obsession with French toast, in particular stuffed French toast. A few years ago, I had blueberry stuffed French toast at IHOP. Holy cow that stuff was amazing. It was loaded on top with blueberries in syrup and inside with gooey cream cheese type frosting. They say absence makes the heart grow fonder so maybe I’m just mis-remembering how good it was. Yeah, let’s go with that.

The past few days of contest prep has been pretty difficult mentally. I’ve finally hit that wall, although it’s much later in prep this time than last time. It didn’t help that the skies opened up here and rained at last. Or that I was stuck inside at my desk all week without a window in sight. Or that nothing in my wardrobe fits anymore.

If you’ve been reading here for a while, you know that I’m a single mom AKA I’m cheap. I can coupon things like squeezing blood out of a turnip. I rarely go clothes shopping so most of my closet is actually from quite a few years ago. Some from even before I started working out. Yes, that old. Sizes range from some 4s, a lot of 6s, and a couple 8s.

I’ve bought a couple things here or there out of necessity but mostly I just tighten the belt a bit more and deal with it. I’ve reached the point now that my 2s are getting to be baggy so you can imagine how well a size 8 fits. Feeling like you’re wearing your mom’s clothes does nothing for your self esteem or mood. Trust me on this one.

I decided to bite the bullet and went on a mild shopping spree to revamp my closet and happiness. Since being contest lean isn’t maintainable year round, I expect that I’ll gain about 5 pounds afterwards. I kept that in mind when shopping so I focused on tops and accessories but I did get a couple pairs of pants and skirts.

If you’re in the process of losing weight yourself, I really recommend getting a few things that fit you. You don’t have to spend a fortune. A bunch of tops can be mixed and matched with a pair of pants or skirt to make multiple outfits. Definitely go cheap on the bottoms if you plan to lose more weight since those aren’t as size forgiving as tops are. Feeling good in your clothes helps during weight loss for many reasons.

If you feel comfortable, you’ll project more confidence and even BE more confident. You also won’t be tugging, adjusting, or falling out of things. People will notice sooner that you’ve lost weight. No one has noticed until just recently that I’ve lost weight. Most likely it’s because I’ve been hidden under baggy clothes for months.

As a celebration for my minor shopping spree, I whipped up my own version of stuffed French toast. Who needs IHOP when I’ve got the skills to create this. Just over 300 calories and totally doable. 😉

Banana Blueberry Stuffed French Toast Banana Blueberry Stuffed French Toast

  • 2 slices Ezekiel cinnamon raisin bread
  • 1 egg white
  • 1/4 cup vanilla unsweetened almond milk
  • 1/4 cup Greek nonfat yogurt
  • 1/2 scoop (17g) banana cream protein powder
  • 1/4 cup blueberries
  • Cinnamon, to taste

Mix the egg white and almond milk in a shallow dish. Sprinkle in some cinnamon if you’d like. Heat a pan over medium heat and spray with non-stick spray. Dip a bread slice in the egg mixture on both sides. Fry in the pan until browned on both sides. Repeat with the other slice.

Mix the yogurt and protein powder, adding a little water if needed, into pudding consistency. Spread between the slices of bread to make a French toast sandwich. Microwave the blueberries for 45-60 seconds until they are warm and juicy. Pour over the toast and sprinkle with more cinnamon to garnish.

Makes one serving at approximately 304 calories – 30g protein, 49g carbs, and 3g fat.


  • I used Trutein protein powder but any brand or flavor would work. If you don’t like banana, try chocolate, vanilla, cookies and cream…
  • I needed to meet my protein so I used protein powder, but you can leave it out. Greek yogurt and sliced bananas would be great in between the bread.
  • I had a little bit of leftover egg mixture so I mixed that in with my yogurt and protein. If you’re using real egg whites and not from a carton, skip this idea.
