Portable Powercakes Chocolate Chip Muffin

Have you seen those cute little muffin mixes in a cup? There are a few brands out there like Flap Jacked Mighty Muffins and Kodiak Cakes Minute Muffins. They come in a cup, you add water and microwave. How easy is that? Not bad if I say so myself, except not every grocery store has them.

Also their kind of expensive and a specialty item that will just take up space in your kitchen. You can easily make your own and save a little money, plus make your very own flavors. I just measure out the dry pancake mix into a small plastic container, add in whatever mixins I feel like, add water, and microwave.

Tah dah, portable muffin for one and no trip to the store for a special purchase required. They’re just as easy to bring with you to work or keep in your desk for snacks. Just add water and you’re 90 seconds away from a muffin. My favorite flavor is chocolate chip, but you can mix in apple chunks, raisins, blueberries, or anything your heart desires.

Portable Powercakes Chocolate Chip Muffin

Add the mix and the water to a small plastic, microwaveable container. Stir to combine and mix in the chocolate chips. Microwave for 90 seconds until the top is set. Microwave an additional 10-15 seconds if needed based on your microwave.

Makes one mini muffin at approximately 232 calories each – 13g protein, 36g carbs, and 4g fat.

    8 marshmallows

      The smores version sounds wonderful!!!! I love the chocolate/marshmallow comb too. I need to try the banana one. I think I might add PB2 or maybe walnuts for a banana bread type muffin. šŸ™‚

  4. I just made this but added in blueberries instead of chocolate chips and a splash of vanilla extract. It was good but not very sweet and kind of bland. I’m going to try to add a little butter and maybe some sugar
