Yesterday The Kid and I made our weekly pilgrimage to the local Sam’s Club to do our grocery shopping. We go grocery shopping weekly because it just works out easier and more efficient for us that way. Plus I’m not sure I could get more than a week’s worth in my refrigerator.
We don’t eat out much so we buy a ton of groceries for school and work lunches and home eating. When we got back, I crammed all of the yummies into the fridge and all three crisper drawers were packed full of veggies!
What you don’t see in the picture is the celery hearts and tomatoes on a shelf above and the bags of green beans and broccoli in the freezer. That’s just one week’s worth of veggies (I didn’t count fruit) for me and The Kid. It’s probably enough to feed a small army of bunnies should they drop by unexpectedly.
It got me thinking about the “old days” where I’d buy probably a quarter of this amount and at the end of the week half of it would go into the trash, rotten and inedible. The new me actually plans ahead and eats all of these veggies throughout the week. Rarely does anything get tossed into the trash. It’s shocking how much our eating has changed in the last 18 months or so.
Pah on all those doctors that said my high cholesterol was hereditary. It’s now 165 (a drop of about 80 points) and has been for over a year now! I also shake my head at some of the healthy eating plans that I see in magazines including 1 cup of veggies with lunch and dinner. Do you know how small a cup is?!
Why limit something that’s so great for your health and full of vitamins and minerals. Assuming you don’t fry them in olive oil or coat them in cheese sauce, of course. Plus they help keep you full so you don’t eat a cup of cake or brownies along with them. 😉

Love it! Yes, used to throw away so much food it was disgusting! Thanks to you opening up a whole new world of great foods and starting me off on the right track, nothing gets thrown away now! Planning meals and prepping in advance what i can has actually saved money too! Stops me from making or buying too much just because I’m hungry. Great article again! 🙂
