Spring Break has officially started here so look forward to some exciting adventures this coming week. The Kid and I spent the day in downtown Fort Worth visiting the science museum’s new exhibit called Grossology. They explained all sorts of interesting things from poop to barf to mucus. The place is amazing and has some really great hands-on exhibits. The Kid’s fave was the burp machine.
We also went to the Cowgirl Museum that was next door. I’m thankful it was free since it was really rather lame. Yawn-worthy to say the least. Oddly enough there were no men in the museum. Not a one. They all wimped out and refused to visit. Go figure! 😉 It was pouring rain all day so at least we had something to do that didn’t require being outside.
The best news of the day though was the produce pick-up for my co-op! I loved my first order so much that I upgraded to a full share this time. It’s going to be a challenge even for me to eat all of this, but I’m up for the challenge for sure. A full crate of fruits and veggies including some new ones that I’ve never had:
- Japanese Sweet Potatoes
- Rainbow Chard
- Spinach
- Romaine
- Navel Oranges
- Gala Apples
- Strawberries
- Bananas
- Black Kale
- Carrots
- Turnips
- Celery
- Bok Choy
- One Dozen Farm Fresh Eggs!
I’ve had bok choy before but the ones I’ve had have fit into the palm of my hand. As I was rooting through my bin checking out the goods, I came across this beast in the picture above. I had to post on Twitter to ask what the heck it was and discovered it was bok choy. Apparently the godzilla of the bok choy family as I didn’t know they came this big.
I’ve no clue what to do with it, so I’ll take to the internets this week to find out. Tonight I had sautéed lemon pepper spinach and used some of the romaine as lettuce wraps for my ground turkey. I’m seriously in love with the baby spinach. I even treated myself to a salad spinner tonight to make washing and drying it easier. Yes, I’m weird that way.
I see kale chips in my future and maybe even some sweet potato chips. I highly recommend joining a co-op if you’ve got one near year. I’m already looking forward to the next delivery in two weeks! Soon it will be blueberry season. Yeah, baby!
