Another weekend under the belt here. We finally made it out to the pumpkin farm and got the perfect pumpkin to carve. Yes, it was a squash kind of weekend with the spaghetti squash, the butternut squash, and the pumpkin. I’m excited to have tons of seeds to roast and make paleo granola.
I wonder if there is a trick to picking a pumpkin to ensure that you get one full of seeds. Does a smaller one have more seeds or a bigger one? Hmmm. This one is one of the biggest we’ve gotten and it sure sounds hollow. I’m thinking there aren’t many seeds in it but I could be wrong.
I was also excited to find tons of canned of pumpkin at the Walmart! The past couple years there has been a shortage whether you realized it or not. The strange cold weather killed off quite a bit of the pumpkin crops used for canning for stores. Hopefully there will be plenty to go around this year because I’m going to be trying some new recipes.
Pumpkin pancakes, pumpkin smoothies, pumpkin sauce… As you can see, I love pumpkin. The Kid also needs to come up with ideas on how to carve the pumpkin. She hasn’t given me ideas she thinking about so it’s still a mystery. We attempted to find a costume yesterday and were sorely disappointed with the selection. We came home empty handed and with pouty faces.
