On most days, I am highly caffeinated. Not so much for the caffeine itself, but more because I love coffee. Espresso to be exact. In order to save myself some money, I even got a stove top espresso maker for use at home. Unfortunately that kinda backfired on me as it then gave me the ability to make my own without leaving the comfort of home. Sigh.
So when I’ve had my fill of drinking my espresso, what do I do? I rub it on my steak for dinner! Yeah, take that. I’m a huge fan of steak, of coffee, of saving time, and of grilling. This is all of those things rolled into one great tasting dinner. In case you missed it, this was dinner this Wednesday brought to you by What I Ate Wednesday.
Espresso Chili Rubbed Skirt Steak
- 1 lb skirt steak
- 2 tsp chili powder
- 1 tsp finely ground coffee or espresso
- 1 tsp granulated sugar
- 1/2 tsp salt
Mix the spices in a shallow dish or small bowl. Rub the spice mixture over the steak, pressing the spices on so they coat the surface well. Let the steak sit for about 30 – 60 minutes. Preheat your grill to medium heat.
Grill the steak for 7 – 8 minutes per side until cooked to desired doneness. I love mine rare but not everyone is that thrilled with pink centers in their steak. Remove from grill and let it rest for 10 minutes. Slice into thin slices across the grain for tenderness.
Makes 4 servings at approximately 184 calories – 24g protein, 1g carbs, and 9g fat.
This steak is so easy. If you can smear spices on a steak, you can make this dinner. I love using skirt steak because it’s a pretty inexpensive cut of beef and is also low in fat. Unlike some cheaper cuts, this one can actually be tenderized by slicing it against the grain. That way you don’t end up chewing and chewing on shoe leather beef.
