Pancakes are like the waffles high maintenance cousin. You have to heat a pan, get it just right, flip them carefully. Waffles are just so much easier in my mind. Plug in the iron, batter up, done. Sometimes you need the quick and easy waffle, and other times you want the fancy dancy pancakes. I love this version of pancakes that I make.
They are high in protein but unlike many protein pancake recipes, they don’t use protein powder. You can add protein powder to them if you like, but not necessary and you still get 20g and keep them dairy free. Pick different add ins and use a different extract to change up the variations. Nuts and almond extract, bananas and rum extract, sprinkles and butter extract. All verified and approved by yours truly. š
Blueberry Chocolate High Protein PancakesĀ
- 1/2 cup (40g) old fashioned oats
- 3Ā carton egg whites (138g)
- 1/2 tsp butter extract
- 1/2 tsp baking powder
- 1/4 cup (50g) fresh blueberries
- 1/2 Tbsp (7g) chocolate chips
Mix the oats, egg whites, extract and baking powder in a blender or magic bullet. Blend until smooth. Stir in the blueberries and chocolate chips. Make in a frying pan like pancakes.
Makes approximately 3 pancakes at 295 calories for the whole batch – 20g protein, 38g carbs, and 6g fat.
I haven’t tried making waffles with the batter but I don’t see any reason why it wouldn’t work. I have been lazy or in a hurry and skipped the blender part. I mix all of the ingredients in a plastic container and microwave it. You won’t have that pancake shape or texture, but it comes out almost like baked oatmeal.
