I’m sure you’ve heard that breakfast is the most important meal of the day. Actually in my mind sometimes, it’s pancakes that are the best meal of the day whether or not they happen at official breakfast time. I love pancakes. Any flavor actually. If you’ve ever attempted to try protein pancakes, you know that sometimes they can be a bit… uhhhh, these aren’t pancakes!
Thankfully that problem is easily fixed with the addition of a little bit of oats to the mix. Oats give the protein powder something to hang on to and turn into the pancake texture that you’re used to instead of the weird… this tastes like eating a kitchen sponge moment. Yeah, that moment isn’t a good one. This is my go to protein pancake recipe and it’s also good for making waffles if you rather some nooks and crannies going on.
Blueberry Muffin Protein Pancakes
- 1/4 cup (20g) old fashioned oats
- 1 scoop (34g) blueberry muffin protein powder
- 2 egg whites
- 1/2 tsp baking powder
- 2 – 4 Tbsp water
Mix the egg whites and dry ingredients in a blender or Magic Bullet. Start with 2 tablespoons of water and blend. Add a tablespoon more water at a time until you get pancake batter consistency. Use the batter to make either pancakes like I did or waffles.
Makes 4 medium sized pancakes at approximately 235 calories – 30g protein, 23g carbs, and 4g fat.
I used blueberry muffin protein powder by Dymatize which is a protein blend. I find that a blend works better for things like mugcakes, pancakes, and waffles better than pure whey or casein. I’m not loyal to a particular brand of protein. I pick more on flavor and price so my protein options change depending on my mood and my wallet.
You can make these pancakes in thousands of flavors just by picking a different protein powder. I will say that I laughed because the reviews of this flavor were negative. They were all up in arms claiming that it tasted more like blueberry pancake batter than blueberry muffins. Um, and that’s a bad thing, people?! What planet are you from?! I’m all over the blueberry pancake batter flavor. Sheesh! 😉
