Not Much Is Better Than Breakfast For Dinner

Strawberry Breakfast SouffleI love having breakfast for dinner almost as much as I love having breakfast for breakfast. It’s fast, it’s easy and there are usually leftovers for the next morning. We had strawberries on hand from the co-op pickup so I wanted to use them up last night.

I found a recipe and modified it a bit to come up with a new idea. It started out as German pancake type recipe and morphed into more of a pancake flavored soufflé. It was perfect to use the last of the berries and required ingredients that are on hand in almost every kitchen.

Strawberry Breakfast Souffle

  • 1 pint strawberries
  • 2 Tbsp butter or butter substitute
  • 3 eggs
  • 1 1/2 cups milk or milk substitute
  • 3/4 cup flour
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1/4 tsp salt

Preheat oven to 375 degrees. Wash and slice the strawberries and set aside. Put the 2 Tbsp of butter into a glass pie dish and microwave for 20 seconds or so until the butter is melted. Swirl the dish to coat the bottom with the melted butter.

In a bowl, beat the eggs and milk until blended well. Add in the flour, sugar, vanilla, and salt and mix. Pour the batter into the pie dish over the butter. Bake at 375 degrees for 25 – 30 minutes until the edges are golden and the center is set.

It will puff up a little bit in the oven like a soufflé but then sink once you take it out. Cool for 5 minutes and top with the strawberries. Slice and serve. Makes about 6 servings.

I made ours dairy free using vegan butter and almond milk. You can sprinkle the top with powdered sugar, or do what The Kid did and pour on syrup like a pancake. I bet even unsweetened cocoa would be great with the strawberries. I should have tried that now that I think of it.

The Kid went back for seconds and thirds so this got the Seal of Approval for sure. You can also use any type of berries or fruit that you’d like to top it. Blueberries, mangoes, applesauce. Hopefully we get more berries so I can experiment with this again!
