Today was leg day for me and as usual I decided to pick a reward to help me make it through. I’ve been poking around the internet for paleo recipes lately and found one that I decided to modify and give a try after my workout.
If cavemen had pans, I wonder if they would have made these paleo pancakes. I’ll warn you, these pancakes were pretty yummy but not if you are expecting pancake texture and flavor ala IHOP breakfast style. They look very similar to hamburgers, don’t they? 😉
They included my favorite things – chocolate, coffee, and coconut. I enjoyed three of them post-workout and am going to freeze the leftovers for some other time. They are relatively high in carbs from what I’ve been eating which is why I decided to eat them after a leg workout and not on a regular day.
Choco-Paleo Pancakes
- 1/2 cup coconut flour
- 2 eggs
- 2 Tbsp unsweetened applesauce
- 1 Tbsp unsweetened cocoa
- 1 Tbsp coffee grounds
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla
- 1/4 cup water
Mix all of the ingredients in a small bowl. The batter will be wet but kind of crumbly and thick. If you need to, add a bit more water a little at a time until the batter clumps well. Grease and heat a pan over medium heat. Scoop some of the batter onto a big spoon and smoosh (my technical term for it) it with your fingers to press it together.
Drop into the greased pan and carefully press into a pancake shape with the spoon or your fingers. I used my fingers but be careful to not burn yourself! Cook until brown on the first side and gently flip to brown the other side. Makes 6 pancakes. I ate my three with some coconut butter on top.
Note: You can use instant coffee granules if you have those around. I don’t have instant so I used my leftover coffee grounds from my morning coffee.
You can get creative with these and add in spices like cinnamon and nutmeg. You can also use pumpkin or mashed banana instead of the applesauce too for a slightly different flavor. Let me know what you think.
