I found a great cookbook and was reading through it yesterday morning as I relaxed for a bit. It’s called Paleo Comfort Foods
and it’s full of yummy, paleo friendly recipes! I’ve been eating my chocolate, almond butter eggs for a few weeks now for breakfast and I decided to try something new.
I found a recipe for breakfast sausage that sounded good so I modified it a little bit and came up with something great. I’m having two of them for breakfast this morning when I get to work. The spicy/sweet combination in this sausage is quite the tasty morsel. I also love blueberries and would eat them any chance I got so I jumped at the chance to include them.
These would go well on the side of the paleo pancakes that I made this weekend. Imagine blueberries, chocolate, coconut and coffee all rolled into one breakfast! These sausages couldn’t be easier to make too. I may never get store bought again.
Spicy Blueberry Sausages
- 1 lb ground pork
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp sage
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp crushed red pepper (or to taste)
- 1/2 cup frozen blueberries
Mix all of the ingredients together and shape into sausage shaped patties. Heat a pan over medium heat and cook the patties until done. Flip a few times so that they brown evenly. Makes about 8 sausages.
After I made the sausages last night, I had another stroke of brilliance. I sautéed my brussels sprouts in the leftover sausage drippings to add flavor to them. They were delish with dinner and I have tons leftover for tonight.
I had a groupon for Whole Foods that I got to use yesterday. I stocked up on all kinds of veggies for this week. I need to do some reading to figure out what to make with some of them. In particular, the tomatillos I purchased on a whim. I read somewhere to try one new fruit or veggie each week so I went with it. 😉
If you have any tomatillo ideas, let me know. I have a chili recipe that calls for them, but not sure I want to use them for that purpose. Maybe in a salsa or grilled to top my chicken.

Those look good – I’m a sucker for sausage. (I just realized that sounded better in my head.) Anyway, what are those chocolate almond butter eggs you speak of??
I’ve been mixing 3 eggs with 1 tbsp of unsweetened cocoa and cooking them that way. Like scrambled eggs. Then I top it with a tbsp of almond butter and some cinnamon. It’s quite tasty. I also do a low fat version sometimes with egg beaters or just whites and a mashed banana. http://ow.ly/6GzFg
