Are you still up to your ears in leftover turkey? The Kid and I made the smallest turkey we could find, but we still had quite a bit left after Thanksgiving dinner. I froze a batch for later but I’ve been looking for creative ways to use them besides just reheating the turkey and tossing gravy on top. That would be boring and expected.
I came up with the adult and kid friendly idea of making mini thin crust turkey pizzas. They turned out really well and helped me use up the remaining cranberry sauce too.
Mini Thin Crust Turkey Pizzas
- Shredded Turkey
- Cranberry Sauce
- Cheddar Cheese
- Stuffing/Mashed Potatoes (optional)
- Sandwich Thins or Small Tortillas
Turn on the broiler on your oven and cover a cookie sheet with tin foil. Place the sandwich thins or tortillas on the cookie sheet. Have fun topping your pizzas with the turkey, cranberry sauce and cheese. You could even get creative and also top with stuffing pieces or mashed potatoes. We used dairy free cheddar cheese to make an allergy acceptable version for The Kid.
They turned out to be fun to customize and pretty tasty to eat too. Place under the broiler for about 3 – 5 minutes until the cheese is melted. It doesn’t get much easier than that. Plus you get to use turkey leftovers without having to choke down another dry turkey sandwich.
Make these your own by adding your own toppings in the amounts you like. Use a different cheese if you prefer or smear gravy on too. The combinations are endless. Who says that eating healthy has to be boring?
