High Protein Chocolate Mousse

Chocolate mousse. Did I get your attention with that? LOL, I would have stopped mid-sentence if I heard those words. I used to make a mean chocolate mousse from a Martha Stewart recipe. OMG, it was good… and full of heavy whipping cream and lots o’ chocolate. Once I began experimenting with making things lower in calorie, I moved to mousse made with tofu or avocados.

Both of those versions were good, but I save them for special occasions. Not because they’re higher in calories, but because they take time and ingredients. It’s not one of those things you can just decide to make. You’ve got to hope you have a ripe avocado or a block of tofu along with chocolate chips and other stuff.

This month, I’ve challenged myself to see how long I can go without going to the grocery store. My goal is to get creative and use what I already have in new ways. It saves money, clears out all the odds and ends I’ve got, and it’s kinda fun to see what I come up with.

Soooooo after finding a box of chocolate pudding, the two ingredient, low calorie, high protein chocolate mousse was made. OK, it’s three ingredients if you count the water but let’s not count it. Errrrrryone has water.

Low Calorie High Protein Chocolate Mousse

  • 2 cups (454g) nonfat Greek yogurt
  • 1 box (96g) sugar free chocolate instant pudding mix
  • 3/4 cup water

Mix the yogurt, pudding mix and water in a large container until well mixed. I used a spatula so I could get everything blended together well and scrape the sides. Refrigerate for about 30 minutes until thickened. Scoop into a bowl and enjoy.

Makes 4 servings at 104 calories each – 13g protein, 13g carbs, and 0g fat.

If you prefer a sweeter mousse, you can add sugar or artificial sweeteners. Taste it first though. The chocolate mousses I love are the less sweet versions made with dark chocolate. This had that kind of flavor so I didn’t need to add sugar. You can also make this with regular instant pudding, vanilla or other flavored pudding mixes, and even… wait for it…. freeze it for a little to make an ice cream version.
