I had planned on a different recipe for you today, but then a chocolate craving happened at the Quest House last night. Yeah, I know! That’s odd. How could that be?! ROFL. I love chocolate and I love peanut butter. You get the idea now.
Given that my most viewed page of all time is the Chocolate Peanut Butter Protein Mugcake Perfection, I’m assuming that you feel the same way. I crafted another chocolate peanut butter version but in ice cream form instead of mugcake. Of course, if you’ve got the macros to play with, make your mugcake ala mode and I’ll be totally jealous of your creativity and ambition.
Peanut Butter Chocolate Protein Ice Cream
- 2 Tbsp (12g) PB2 or other powdered peanut butter
- 1 scoop (42g) chocolate protein powder
- 1/4 package (11g) sugar free fat free chocolate instant pudding powder
- Water
Measure out your PB2 into a small cup or dish. Mix with a little water and stir. The consistency should be about like ketchup or just slightly more runny. You don’t want it too liquid. Drizzle the PB2 onto a piece of waxed paper. I drizzled mine into swirls. Pick a pattern and go with it. Carefully place the waxed paper into the freezer to harden.
Measure the protein powder and chocolate pudding powder in a small bowl with about 1/4 cup of water. Mix well until blended. You may need to add a little more water depending on your protein powder. Freeze for about an hour so that it slightly hardens. Take the protein mixture and PB2 out of the freezer for a second. Break pieces of the frozen PB2 off and stir into the frozen protein. Return to the freezer for another hour or so.
Take out and enjoy! Makes one luscious and delicious peanut butter chocolate serving at approximately 225 calories – 31g protein, 20g carbs, and 4g fat. Your macros will vary depending on the protein powder you end up using, but they shouldn’t be too far off.
I used MuscleTech’s Phase 8 protein powder because I love the taste of it. You can play around with different flavors and toppings. Top with crushed graham crackers, marshmallows, sugar free caramel syrup, or berries.
I fully intended to top mine with a big marshmallow but the marshmallow suffered a quick death before ending up on the ice cream. Yeah, I couldn’t wait. I want to know what flavor you came up with. Describe it to me in the comments below.
