Nectarine Pico di Gallo

I love all different types of salsa and pico de gallo, and they are really easy to make. If you can chop fruits and veggies, you can make a salsa in a flash. Nectarines and peaches were on sale this week, so I got a few to have on hand. I used one of them to make a quick pico di gallo and loved the colors. Reds, oranges, greens – kind of like the Skittles version of the salsa world.

  • 1 large ripe nectarine
  • 1 medium roma tomatoes
  • 1 medium yellow onion
  • 2 Tbsp fresh cilantro, chopped
  • 1 Tbsp lime juice

Chop the nectarine, tomatoes, and onion and add to a bowl. Add the cilantro and lime juice and toss to coat. I didn’t really measure the amounts that I put in and just eyeballed them for the most part. I used approximately 1 cup of nectarine, 1/2 cup of tomatoes, and 1/2 cup of onion. The amounts don’t have to be exact and variations can be based on how you like it.

Big chunks, little chunks, more or less of any ingredient. You can also use different fruits like peach or mango instead. Makes approximately 2 cups of pico di gallo.

I grilled salmon filets and topped them with the salsa. I also ate a bunch just with a spoon since it was pretty tasty. This would be great in a fish taco too. Use it in place of any pico di gallo and get creative with it.

I’ve heard that some people have a weird thing about eating peaches because of the fuzz, but I’ve never really had an issue with it. How about you? Fuzz or no fuzz?
