Pesto Change-o I Got Creative And Worked Some Magic

pestoI realized that it’s been a while since I’ve had pesto. I loooooove pesto. Being on a relatively low fat diet pretty much squashed all chances of working pesto in. Now that I’ve changed things up, all kinds of doors have reopened for me. I’ve been putting olive oil on my green beans and broccoli and things like that.

It suddenly occurred to me that pesto could once again be on Le Quest Menu. I can’t have the usual pesto with parmesan and stuff so I set out to make a paleo version. I googled up a recipe, modified it a bit to remove the cheese, and set out to locate 2 cups of basil. I discovered at Walmart that 2 cups of basil was going to cost me over 10 bucks! As if. So I got creative on the spot and made a handy substitution on the cheap.

I came home and whipped up some of THE best pesto ever. In fact, it’s so good that I’m calling it F’awesome Pesto because this pesto is effing awesome! Yes, I named it myself with no help from The Kid. She did have to endure the joyous yummy noises I made as I ate it.

F’Awesome Pesto

  • 1 cup packed parsley
  • 1 cup packed cilantro
  • 1/2 cup olive oil
  • 1/2 cup almonds (or almond flour if you have that on hand instead)
  • 4 cloves garlic

Throw everything in your Magic Bullet or food processor and mix until pesto-ey. That’s it. You’re done. Seriously. I used almond flour because it was already ground and I didn’t want to use up my whole almonds. If you go the almond route, you may have to grind longer than I did.

Schmear this stuff on anything you like. I had mine on my steak, and then some more on my green beans. Then some on my chicken. Then some on just the spoon. Dang it, I forgot to try it on my eggs! Did I mention I love pesto? The only downside to this is that vampires will not be hanging out here for a bit with all the garlic.

I bet you could get really creative with this if you wanted. Use different kinds of nuts. Walnut pesto maybe? Or add a dash of lime and hot sauce for a Mexipesto. I’ll definitely be giving different versions a try. If you come up with something good, let me know! I want to try it.
