roasted tomato sauceYesterday didn’t end up quite as eventful in the house cleaning department as planned since I got waylayed by running errands and getting other stuff done. I got my room entirely cleaned but got no further. It definitely wasn’t a bust by any stretch.

I had an awesome leg workout to end the morning. It was a bit different than the usual workout. Very heavy weights and few exercises. (I moved up to 100 lb lunges and squats!) This was a building workout to grow muscle. Grow, muscles, grow.

Afterwards I had an Old Navy groupon that was expiring so I stopped by on the way home. As luck had it, just about the entire store was on clearance! I got three pairs of shorts with the groupon for a grand total of 83 cents. If you add in the groupon cost – $10.83. Then I stopped at the garage to get the state inspection done on my car. Boom, a $15 rebate plus a free $11 car wash thrown in. Next was CVS for a 25% off shopping trip with a coupon they sent me. I stocked up on toothpaste and other stuff that I needed. I also used coupons on the stuff I bought for even more saved.

I’ve been dying to get a new grill lately. I found one at the Lowe’s that I really really want. It’s got infrared heat, a lifetime burner warranty, stainless steel. It’s gorgeous and like crack to a foodie! It’s kinda expensive though compared to other grills its size. $248 worth of expensive. I’m having trouble justifying the expense since I have a grill here that works. Sigh, my new mission is to save enough in couponing to cover the cost of the grill. So look for some extreme couponing in the future – Quest Style, of course!

The day wound down with my most successful recipe attempt to date! This is seriously THE most amazing tomato sauce I have ever had. I served mine over spaghetti squash, but it would be just as good on real pasta or even bruschetta slices with basil leaves. Two ingredients, seriously! How simple is this!

  • 12 whole roma tomatoes (appx 3 lbs)
  •  3 tsps minced garlic

Preheat oven to 375. Sprinkle garlic around the bottom of a glass baking dish. Wash and dry the tomatoes, and place them in the dish on top of the garlic. Spray tomatoes with non-stick spray until they are shiny, but not dripping. Just a light mist. Bake at 375 for about 2 hours. Drop the tomatoes into a blender or Magic Bullet, and pulse until it’s the consistency of sauce that you like.

I like my sauce chunky so I just did a couple pulses. You could also just mash them with a fork if you’d like for a very chunky sauce, or blend completely. I didn’t add any salt or spices this time and thought the sauce was amazing. The recipe makes about a quart of sauce so I’ve got leftovers. I may add in a bit of basil and balsamic vinegar today at lunch. Delicioso!

Experiment and make the sauce your own. Use olive oil instead of the spray if you aren’t watching fat/calories. Throw in spices. Let me know what you think and leave me a comment with your version.
