Sweet and Crunchy Chicken Salad

Have you ever had Waldorf Salad? Ladies who lunch in white gloves or attend high tea have Waldorf Salad. LOL. It’s true! 😉 Just in case you’re one of those that leaves your white gloves at home and don’t attend tea, Waldorf Salad is a chicken salad with apples, grapes, walnuts all mixed up with mayonnaise. It’s crunchy, sweet, creamy.

Depending on how heavy handed the chef is, the salad can be very creamy. I decided to make my own version of the Waldorf Salad and changed a few things. It turned out pretty good and I loved the mix of flavors in it. To keep the fat content down, I used a mix of low fat mayo along with non-fat Greek yogurt. Throwing carrots into the mix gives it crunch without needing walnuts.

  • 16 oz grilled chicken breast, cubed
  • 1/4 cup (25g) yellow onion, diced
  • 1/2 cup (200g) carrots, sliced into coins
  • 1/2 cup (200g) grape tomatoes, halved
  • 2 oz (56g) raisins (two snack sized boxes)
  • 1/4 cup (60g) light mayonnaise
  • 1/4 cup (60g) nonfat Greek yogurt
  • Romaine Lettuce

Cut the chicken and veggies into bite sized pieces and add to a large bowl. Add the raisins, mayo and Greek yogurt. Mix well to combine. Serve over lettuce.

Makes 4 servings at approximately 244 calories each – 23g protein, 20g carbs, and 8g fat.

I even dared to eat my version gloveless! I had a few extra lettuce leaves and turned them into chicken salad lettuce wraps. Pretty cool, huh? That’s how I roll. 🙂
